Q: I have three of these cameras. All of them work well during the day but the night vision does not work. Unless there’s a light on near where the camera is I cannot see anything. Is there a specific setting to make this work properly?

SaschP the night vision cut over wont work properly if your device hasn't got sufficient power. id confirm firstly that you are supplying the correct voltage for it.

Q: Is the torque adjustable? I'm looking for a screwdriver that I can set to 1.1Nm of torque. The pictures on the listing here don't show if/how torque can be set.

SaschP its just a lense so will screw in to any cam that has the right size thread

Q: As per the specs, the iron works with 110v-240v. What you can select is a different plug depending on the country where you live. Is this correct?

SaschP yes correct, however the choices are eu or us plugs. i had to change the plug to an au one myself, but i do that often. this is my favorite soldering iron
